I did, however, make the most of my few days off. I made my usual attempt at catching up on sleep and did a bit of relaxing. On Saturday I went to a lovely little restaurant in Minneapolis for a late brunch. The food was delicious and the atmosphere was so charming. I also did a little shopping at West Elm. I love absolutely everything about that place.
On Saturday night I decided I wanted to try a new recipe. I've had this one on my to do list for ages and I finally gave it a go this weekend. It's a quinoa veggie stir fly and it is delicious. I also made some of my favorite veggie burgers ever to go with it.
Sunday included lots of cleaning and laundry and a dinner party with coworkers. Overall I had a lovely weekend but it was far too short. I may or may not already be counting down to the next...
How was your weekend? Did you do anything fun?
You always have the best weekend snapshots! And make me want brunch. I guess I had it in the Reno airport on Saturday morning, but that's not quite the same. I'm glad you got to relax and have a little bit of fun! My weekend was pretty low-key after a week of skiing too, and I'm so happy to have internet back!
